Roasted Garlic Mashed Cauliflower
A side dish similar to mashed potatoes with its own distinct and delicious taste.

Ingredients
- 1 head of cauliflower, cut into florets
- 3–4 cloves Roasted Garlic
- 1 tbsp Dairy-Free Cream Cheese
- 1 tablespoon Homemade Nut Milk or store-bought plant-based milk
- Black pepper, freshly ground, to taste
- Chives, fresh, chopped
Instructions
- Prepare Roasted Garlic.
- In a steamer or saucepan with a steaming rack, steam cauliflower for 10 minutes or until tender.
- Place half the cauliflower into the food processor and blend on high until smooth. Add remaining cauliflower florets, roasted garlic, dairy-free cream cheese, nut milk, and ground pepper and blend until smooth.
- Add chopped chives to garnish.
