Ingredients

  • 1 cup onion, diced
  • 23 tsp garlic, fresh, minced
  • 5 cups water
  • 1 cup lentils, uncooked
  • 1/2 cup brown rice, uncooked
  • 1 tbsp chili powder
  • 1 1/2 tsp cumin, ground
  • 1/2 tsp smoked paprika
  • 1/4 tsp onion powder
  • 1/4 tsp red pepper flakes
  • Black pepper, freshly ground, to taste

Instructions

  1. In a large pot, sauté onion and garlic over medium heat, adding a drop or two of water if needed.
  2. Add all remaining ingredients. Stir and simmer uncovered over medium-high heat. Stir often and turn off heat when rice and lentils are cooked.
  3. Use as filler for hard or soft tacos, topping with your choice of fresh, plant-based ingredients.
