Spicy Lentil Tacos

A simple weeknight meal that is packed with authentic Mexican flavor.

Ingredients
- 1 cup onion, diced
- 2–3 tsp garlic, fresh, minced
- 5 cups water
- 1 cup lentils, uncooked
- 1/2 cup brown rice, uncooked
- 1 tbsp chili powder
- 1 1/2 tsp cumin, ground
- 1/2 tsp smoked paprika
- 1/4 tsp onion powder
- 1/4 tsp red pepper flakes
- Black pepper, freshly ground, to taste
Instructions
- In a large pot, sauté onion and garlic over medium heat, adding a drop or two of water if needed.
- Add all remaining ingredients. Stir and simmer uncovered over medium-high heat. Stir often and turn off heat when rice and lentils are cooked.
- Use as filler for hard or soft tacos, topping with your choice of fresh, plant-based ingredients.
