Cashew Sour Cream

A plant-based version that can be used as a topping on Sweet Potato Nachos or as an ingredient in dishes like Shiitake Stroganoff.

Ingredients

  • 1/2 cup cashews, raw, soaked overnight
  • 1/4 cup water
  • 2 tsp apple cider vinegar
  • 2 tsp lemon juice, freshly sqeezed

Instructions

  1. Add ingredients to high-speed blender and blend until smooth and creamy. Chill before serving.

Notes: If you forgot to soak the cashews overnight (or between 4-8 hours), you can soak them for one hour in hot water right before preparing.
